Can you use pork loin instead of beef?
Hello Chef John, thank you for your video, it was really good teaching how to cook. And it really looks good too. I'm wondering if this dish is Iranian, you know, last time i saw your 'saffron rice' recipe and i thought i could see more Iranian food from yours.
I'm not an Iranian though, my husband is and i'll be happy if i could cook for him some of his home food. If possible, would you upload some Iranian recipes for your next video as well, i personally think, Iranian food, they are top notch! :)

Just to say, while meat was in the bowl and barley was cooking, wouldn't it be nice to pull apart the meat instead of having chunks of fat and bone in the plate ?
I would only eat this if someone made it for me.

I always rinse the barley before cooking it, making sure there is no debris, like little stones in it. Soak overnight and drain off the soak water, and leave out on the counter to sprout a little, which will remove much of the phytic acid. It will be more nutritious, digestible and will cook more quickly.
Leaving the barley out… just don't have it… got it all ready up to a boil.. put the meat in a crock pot and then I poured the hot liquid on top forgot the carrot so stuck them in at that point. Added extra carrots only because my kids love them. So if anything it may be a bit more sweet. Should be lovely when ready. Thanks!!
Made this several times. Made a small change, took out the tomato paste out and add 2 shakes of hot sauce after serving, not too much, just a taste.
I'm making this for supper tonight. Sadly, my supermarket didn't sell beef shanks so I'm going to use short rib.
I wouldn't add the horseradish, that's a bad idea.
Is there any instructions cooking this using a pressure cooker to cut back on the cooking time or how about using slow cookers? Thank you!

I love beef and barley stew! Grew up with it. I made this for my husband and brother-in law once, they asked me "where the heck were the potatoes and what are all these white things?!? THIS ISNT STEW!" :'( i miss beef and barley stew.
Chef, if you like stew, you have to try Nihari, which is like an Indian shank stew. It's a-mazing.
