Good recipe I made this once & made the rookie mistake of not rinsing the asparagus well enough, which seemed to have been grown in a sandy soil, it was inedible & the beef was ruined.

I have two questions:1) What is the difference between tapioca and corn starch ?2) Why add the tapioca starch to the meat, then additionally to the sauce later ?
