I've used a combination of Italian sausage and beef for chili but I never thought of using just the sausage. I'll have to give this a try.
I don't mean to be mean, but I remember Chilli con Carne, what happened to the rice since the late 70s and 80s? Back then it was unthinkable to have Chilli without the rice? Still great recipe, but where is the rice!!!!!
chili is meat, and essentially juice, no veggies, etc… at least working for a chili house that's how I learned chili.
