I never had palm sugar before, but I'm sure it's good. I have used different kind of sweetener (even splenda), and always worked. Let us know how it went!

Try using a vegetable slicer. All you need is a basic plastic one that is inexpensive. Or you can just try slicing it really thin with a regular knife which is not impossible
What is a good method to slice the cucumber very thin? Is it a technique or rather dependent on the type of blade the chef uses?
